Okay, so tonight I tried No Bakes with Splenda. All the hype that splenda is as sweet as sugar didn't work for this recipe.
I tried the following recipe that I found on the Splenda web site:
No Bakes with Splenda
2 Cups Splenda
4 Tablespoons cocoa powder
1/2 Cup milk
1 stick butter (yes I used the REAL thing)
Stir together and over medium heat and bring to a slow boil. Boil for only 1 minute.
Add:
3 Cups quick cooking oatmeal
1 Cup peanut butter
Diagnosis: Not nearly sweet enough, in fact it tasted more like dark chocolate.
I made another set with sugar and it's so super sweet. We haven't had something this sweet in the house for a long time and it's going to be a long time before we make this again. By the way, I will probably use half sugar, half splenda next time and see how that works. Will keep you posted!

J's heart surgery has been a turning point for me. I'm watching what we consume much more closely. We've also been careful with his diabetes and he's been feeling a lot better in regards his neuropothy. I've been searching for recipes that will help us on our journey.
